Horseradish Mashed Potatoes With Caramelized Onions

INGREDIENTS :
CARAMELIZED ONIONS:

  • 2 large yellow onions diced
  • 2 -3 Tbsp butter
  • salt and pepper to taste

POTATOES:

  • 4 Tbsp butter 1/2 stick
  • Salt and pepper to taste
  • 3 lbs yukon gold potatoes
  • 1 tsp salt
  • 2 Tbsp prepared horseradish more or less to your tastes
  • Fresh parsley minced (for garnish)
  • 1 1/2 Tbsp dijon mustard
  • 1/2 cup + 2 Tbsp heavy cream or half and half

MANUAL :
Convert the onions :

  1. Add 2-3 Tbsp butter to a great pan and energy over MED to MED-HIGH warmth. Add diced onions to pan, and saute, moving oftentimes, for 3-5 proceedings.
  2. Flavour with thyme, diplomacy, and bush.
